Heavy Table Editor James Norton joins Jill Riley and Sean McPherson to talk about the future of fine dining in the Twin Cities. With the imminent closing of two landmark Minneapolis restaurants — La Belle Vie and Vincent: A Restaurant — "It seems it's time for a changing of the guard in the fine-dining scene," James says.
In a column for his publication, the Heavy Table, James laid out four criteria that define fine dining for him:
Excellent hospitality
Top-notch ingredients
Convivial atmosphere
Sense of being taken care of
"You think of dining and food as being so universal, but we all bring our own social understandings," James says. "It's going to vary from person to person, and that's OK."
